However, in the future not less than 3 sets of plans shall be submitted with adequate detail to compare to the installation and maintenance manual to conduct a viable plan review. Diagrams shall be drawn to scale, show pipe sizing and .length, types of heads used, sizes of hoods as well as location of filters and size of ducts. Also, a floor plan shall be included showing the location of the supply bottle for the system, remote pull and gas shut-off i.f one is required. Tigard Dear Mr. Richards: The Washington County Department of Public Health has received and reviewed the plans for the proposed Red Lobster Restaurant located at 10330 S.W. Greenburg Road, Tigard. It is, our understanding community water and community sewer will be available and utilized at this structure. The plans are approved subject to the following changes, additions and recommendations: 1 ) Any sink used for washing of fonds must drain indirectly to floor sinks. It is unclear on the plans to the method of liquid waste disposal on *45 ice cube maker and #73-B soda tower. The ice cube maker must have its wastes disposed indirectly. If there is a drained waste tray on the soda tower it must drain indirectly. Any refrigeration unit not equipped with a built-in evaporator pan must have its liquid wastes disposed of indirectly. 2) The plans indicate *87-A handwashing sink with snap and dispensed toweling to be located in the service bar. The relocated handwashing sink in the kitchen must also be equipped with dispensed soap and dispensed sanitary towels. 3) The plans indicate a new grease interceptor will be Installed. Be aware that tae grease interceptor must be located and installed properly. A maintenance schedule must be developed and followed to prevent grease from going clown Into the sanitary sewer. 4) The plans do not show areas of customer self-service. If there Is to be self-service, please notify our department and submit specifications. The plans do not show any method of protecting the preparation counter from customer contamination. All food, food Items, food preparation areas, err,. must be protected from customer contamination. (plan review) 5) All surfaces must be smooth, sealed, non-absorbent and easily cleanable. This includes walls, ceilings, floors, shelving, counters, drawers, cabinets, equipment, etc. in the food preparation/serving areas, storage areas, utensil washing areas, and restrooms. The carpeting can only be used in the dining area. Carpeting can riot be used in a 30 inch strip on all traffic sides of customer self-service areas. We do not recommend the use of perforated acoustical tile ceilings in areas of exhaust hoods or areas of high moisture. Paint used should be durable and seal the surfaces well . Coving of a minimum of four inches in height must be used. There can not be any gap greater than 1/32 of an inch. Any gaps in floors, walls, or ceiling around plumbing or electrical work must be filled in to prevent rodent and insect access and entrance. 6) Each refrigeration unit not equipped with an accurate built-in thermometer, must have a spirit stemmed thermometer located on the top shelf or door. Metal scaled innicating thermometers accurate to +2 degrees F shall be provided to assure attainment and maintenance of proper internal cooking, holding or refrigeration temperature of potentially hazardous foods. Each hot holding facility storing potentially hazardous food shall be provided with a numerically scaled indicating thermometer, accurate to +:3 degrees F. located to measure the air temperature in the coolest, part of the facility and located to be easily readable. Recording thermometers, accurate to +3 degrees F. may be used in lieu of indicating thermometers. Where it is not practical to install thermometers on equipment such as bain-maries, steam tables, steam kettles , heat lamps• cal-rod units, or, insulated food transport carriers, a product thermometer must be available and used to cheek internal food temperatures. 7) To minimize manual contact of foods and ice, please provide and utilize handled scoops and other appropriate utensils. 8) All lamps over or within food storage, food preparation, and food display facilities and facilities where utensils and equipment are cleaned and stored shall be shielded, coated or otherwise shatter resistant. 9) All storage of food, food containers. and single service utensils must be on shelves at least six inches above the floor except where storage is on wheeled platforms or four inch high sealed bases. Metal pressurized containers need not be elevated. All floor mounted equipment, unless readily moveable, shall be: sealed to floor, or installed on a concrete or other smooth raised platform at least four inches high, or elevated on lets to provide at least: a six inch clearance between the floor and equipment if no part of the floor under that piece of equipment is more than six inches from cloaning access. Each ladies restroom must have a covered waste receptacle. 11) Food and containers of food shall not be stored under exposed or unprotected sewer lines or water lines, except where automatic fire protection sprinkler heads may be required by law. 12) Utility lines and pipes can not he installed so they are exposed and installed horizontally on the fluor. 13) Garbage and refuse containers located outside must: be located on or above a hard non-.absorbent surface such as cement or machine-laid asphalt that is kept clean and in good repair, 14) All plumbing must meet the requirements of the city Tigard and the Oregon Uniform Plumbing Code. 15) All emDlovees must have rurrc�nt Washington County Food Handler's Cards.
