Correspondence 16( z pt/4 o7- 0029 "VA ABOSSEIN ENGINEERING MECHANICAL • ELECTRICAL • FIRE PREVENTION • ENERGY RECEIVED November 21, 2007 NOV 2 1 2001 CITY OF TIGARD Ref: Panera Bread grease waste treatment, City of Tigard, OR BUILDING DIVISION To Whom it May Concern; This letter is intended to outline the operations of Panera Bread as they relate to the plumbing systems, specifically regarding the production of greasy waste and the required treatment. Panera Bread is a restaurant facility serving primarily soups, sandwiches and salads that are assembled using ingredients produced at a central off site facility. There are no griddles, grilles or deep fryers used. The breads served at Panera are baked on site but are produced at a central off site facility. • Panera Bread is mainly a single service restaurant utilizing disposable plates and utensils with few customer dishes washed on site. As such; this facility is expected to put a low - demand on the sanitary system with very little grease waste produced. The Panera Breads opened in this region to date have typically used an indoor grease traps for kitchen waste treatment with no problems reported. Based on this information and our experience in restaurant design a 750 gallon minimum grease interceptor per City of Tigard requirements would be more than adequate for treatment of the greasy kitchen waste produced. The hand -hole would provide a flat surface, and flush with surrounding concrete which would satisfy the requirements of code working clearances in front of the gear.
