Dear Mr. Hosmar:
The plans for the remodeling of the tenant space adjacent to the south entrance
of the past wing of the Washington Square Shopping Center to accommodate the
above noted occupancy were examined by this office on June 20, 1979. As a result
of examining these plans we are listing as follows requirements which must be
observed in the development of the project pursuant to current fire safety
regulations; and for which we have found no provisions in the plans under dis-
zussion.
1. Deep fat fryers, broilers, fry grills, steam jacketed kettles, hot top
ranges, oven';,barbecues, rotisseries , and similar food cooking equipment
must be served by a grease hood ' and exhaust duct system constructed
of glavanized steel , stainless steel or copper. If galvanized steel
is employed it must be of not less than #22 manufacturer's standard gauge.
If copper is employed it must he composed of sheets weighing no less than
24 ounces per sc,. ft. Stainless steel employed for thi purpose must have
a thickness of no' less than 0.030 inch.
The exhaust duct fron, the grease hood must be constructed of not less
than #16 manufacturer's standard gauge steel , or stainless steel not
lighter than a18 manufacturer's standard gauge. All joints and seams
must be made of a continuous grease tight weld or braze on the external
surface of the duct.
The exhaust duct must be enclosed in v fire resistive shaft (as shown on
the drawings) which must be continuous from the ceiling of the occupied
space to it; termination to the outside air. The shaft must be separated

From the exhaust duct by a minimum of 3" and a maximum of 12" to the
point of termination. Further, the duct system must be designed and
installed in a manner t� provide an air velocity within the duct of
not less than 1500 lineal feet per minute and not to exceed 2500 feet
per minute.
The exhaust duct. must extend through and terminate at a point at least
2 feet above the rcof surface and at least 10 feet from any air intake
opening.
Further, the hood and exhaust duct system must be provided with an
approved automatic fire extinguishing system which will provide protect-
ion for the throat of the duct, grease filters, and the cooking scrfaces
beneath the hood.
It is hereby requested that complete shop drawings showing the required
hood and exhaust installation, including automatic fire protection system,
to submitted to and approved by this office prior to the installation of
this prescribed equipment.

2. A second exit leading from the dining space directly into the service/
exit corridor is required. This se,ondary exit must be indicated by
means of an "exit" sign having letters not less than 6 inches in height
with the principal strokes being not less than 3/4 of an inch in width.
The exit door must be fitted with finish hardware which is openable from
the dining space side at all time for iniiediate exit without the use of
a key, special knowledge or effort.

3. Alterations of the automatic sprinkler system to accommodate the re-
modeling work as discussed herein must he preceded by the submittal to
and approval of plans therefore by this office.
(ref. Sec. 3801 S.B.C. )
4. In all wood framed walls and partitions fire stopping consisting of 2
inch (nominal ) 1'mrber, gypsum plasterboard or equivalent material is
required at all floor and ceiling lines; and in any case at. maximum
vertical and horizontal intervals of 10 feet.
Penetrations made in this prescribed fire stopping '.o accommodate wiring,
plumbing, duct work and similar utilities runs must be packed, fol owing
the insulation of said utility runs, in a manner wnich will effectively
maintain the integrity of the fire stopping and cut off a' realed
draft opening which could afford a passage for flame.

5. All heat producing, cooking, and electrical equipment and aopliar.ces
installed in conjunction with the development or occupancy c'f this pro-
ject area must be listed by Underwriters Laboratories Inc. or other
nationally recognized testing agency anc must be installed in strict

conformity with the manufacturer's installation instructions which are
the basis for the listing.

6. Inspection and approval of construction by this office is required:
a) Prior to cover of wood framing elements following the installation
of the utility runs and the fire stopping prescribed in requirement
#4.
b) Prior to the opening of this facility to the public.

7. One set of approved plans bearing the stamps of :he Washington County
Building Department and this office must be maintained at the project
site throughout all phases of construction and remodeling work, and must
be made available to building and fire inspectors for reference during
required construction inspections.

3. Prior to the opening of this occupancy to the public a Certificate of
Occupancy or other written authorization from the Washington County
Building Department is required.
(ref. Sec. 306 S.B.C. )
Based upon the foregoing stipulations this office has given the project plan
"conditional approval". The reference note following each of the foregoing listed
requirements indicates the code and section thereof in which the requirement is
contained; i .e. , S.N.C. and S.B.C. refer to the State Mechanical and the State
Building Codes respectively which are an integral part of the fire code of this
District.
