Washington Square Road Confirming our telephone conversation of July 14, 1982, we have examined the plans for the alterations to this building (formerly known as the Magic Pan) with respect to currently appiicable fire safety regulations and find their to be acceptable in this regard. However, from our discussion we understanc that you will be installing a new "grease" hood and exhaust system. Before this installation is made we must have complete plans therefore including plans for the required fire exl.inquir 'iing system. Major points which must be observed with respect to the hoop and exhaust system are: 1 . Adequate make-up air which is electrically interlo.;ked with the exhaust fan. 2 The make-up air must be tempered if the exhaust exceeds 2500 cubic feet per minute. 3. The fire extinguishing system must be interlocked with the cooking equipment to the effect that if the fire extinguishing system is activated, all fuel and power to the cooking equipment is shut off. We find the plans to be acceptable with respect to gently applicable fire safety regui3tions. However, we must again emphasize, as we did in our letter to you of July 14, 1982, that the fire extinyuishing system,w1 ,0 activated,must shut off all fuel and electrical power to the cooking equipment under the hood. Further, a trip test of the system must be made,fcllo4ing its installation and prior to placing the kitchen in operati-- in the presence of a representative of I this office.
