GATE: December 21 , 1979 For your information and for the record, on December 19, dt roughly 1 :30 p.m. , I made a flow test to check the water supply to the automatic sprinkler system which serves both Buildinqs A and B of this complex. The riser for this sprinkler system is located in Building A in the extreme nor":hwest corner. This sector of the building will , when com- pleted, be occupied by Colorways Interiors, according to the current plan. This automatic sprinkler system extends from Building A to Building B; i .e. one system covers both buildings. While the construction of the hood and exhaust duct appear to meet minimum fire safety regulations, the shaft in which the exhaust duct will be enclosed, according to your drawings, will not qualify. The exhaust duct must be enclosed in 3 shaft of one hour (minimum) fire resis- tive construction which must extend from the point where the exhaust duct penetrates the ceiling to the point where it terminates above the roof. The shaftway trust be well ventilated and freely communicate with tPe outside. In addition, a space between the shaft walls and the exhaust duct must be main- tained at not less than 3" nor more than '12". Due to the apparent deficiency in the design of the exhaust duct shaft enclosure, we are obliged to deny approval of the submitted drawings. W. 121st Avenue and Scholls Ferry Roz.d Thank you very much for the store layout drawing which accompanied your letter of transmittal dated September 28, 1979. We note that a doughnut fryer, accord- ing to your drawings, will be installed in the bakery. This doughnut fryer must be provided with a "grease hood" and exhaust system. The hood must be constructed of not less than no. 22 manufacturer's standard gauye galvanized steel , copper weighing not less than 24 oz. per square foot, or stainless steel having a thickness of riot less than 0.030 inch. The hood must be connected to a duct constructed of not less than no. 16 manufacturer's standard gauge steel or stainless steel not lighter than no. 18 manufacturer's standard gauge. If the duct penetrates the ceiling of the bakery and extends through the office space, it must be enclosed in a shaft of not less than one hour fire resistive construction which must extend from the bakery ceiling to a point above the roof of the building. The shaft way must have a cro,s sectional area which will permit a clearance around the duct of not less than 3" and not more than 12" for its entire length. An exhaust fan capable of providing an air velocity within the duct of not less than 1500 lineal feet per minute and not mare than 2500 lineal feet per minute, and the exhaust outlet must be located at ie�st 10 feet from any adjacent building, adjacent property line, air irtake openinq, 2 feet above the roof surface, or 10 feet above adjoining grade in the event that the exhaust outlet is through the exterior wall . It is our understanding that community water and community sewer will be utilized. The plans as submitted are arihroved subject to the following changes or additions: 1 . Sanitary towels and soap must be dispensed at the handwashing sinks in the restrooms and at the handwashing sink irI the kitchen, 2. Spirit stemmed thermometers dre needed in each refrigeration unit: on the top shelf or doer, 3. The restroom doors must be self-closiny. 4. The dishwasher must be commercial and N.S.F. approved. 5. An effective sneeze shield or other means of protection will be required over the salad bar and in any other areas where open containers of food are on display or for self-service. 6. All storage must be at least eight inches off the floor, except whhre storage is on a wheeled platform or on a four-inch high sealed base. 7.
