Dear Mr. Brackett:
The Washington County Delartment of Public Health has reviewed the plans which
were submitted for the proposed Interna*ional Kinq's Table at. 11425 S.W. Pacific
Highway, Tigard, Oregon.
It is uur understanding that community water and community sewer will be utilized
at this structure.
The plans submitted are approved subject to the following changes, additions, and
recommendations:
1) Your plans indicate seating for approximately 245. For seating and
employee total between 201-300, you must have three waterclosets and
two iave. cories in the women's restroom and three waterclosets and two
lavatories in the men's restroom, no more than '15% the waterclosets
can be urinals.
2) All of the foods on display must be prepackaged, wrapped, covered, or protected,
from customryr contamination by a sneeze shield or other appr.ovad means.
3) You lndicateO that the distance from the service line to the bottom of the
sneezy: shield will be twelve inches. This follows our recommendation of
no more than fourteen -4ncnes.
4) Your plata show an ice bin in the self-service ice area. We recommend hav-
ing ice which is automatically dis;,ensed by a machine. There is a greater
risk of disease transfer if an ice bin is used by the public. Ice must be
dispensed with an ice scoop and the scoop must. be stored sir that its handle
is not in contact with the ice. Also, please be aware that glas.5es ran not
be refilled on a beverage dispensing unit that requires the glass .lip to
come into contact with the beverage machine.

ice.
7 T.e flooring in self-service areas is shown as a vinyl.. This flooring
material must be smooth, sealed, non-absorbent, easily cleanable and be
at last 30 inches in width.
8) Carpeting is allowed in the dining area except in the area of the bus
station.
9) X11 surfaces must be smooth, sealed, non-absorbent and easily cleanable.

etc. We do not recommend perforated acoustical the ceiling in areas
above rli.r�washing, cooking and frying.
10) All gaps in walls, floors, and ceilings around pipinc or electrical
work must be filled in to permit ease of cleaning and to proiibit rodent
and insect access.
11) All storage must he off the floor on shelves at least eight inches high
except where storage is on a four inch high Led base or a wheeled plat-
form. This !ncl-ides soft drink canisters, ca s of milli products, non-
food items, etc.
12) Your plans show you will be adding a thr ,e compartment sink. All multi-use
utensils must be of . size which enable them to be washed in the dishwasher
or be totally sub-�rsed in each compartment of t}.e three compartment sink.
13) Sanitary towels and dispensed soap must be available at the handwashing
sinks in the restrooms and at the handwashing sink in the kitchen.
14) A mop hanging device rnust be installed to hang mops between uses.
15) This facility and operator must meet all the Oregon Pules for Eatinq and
Drinkinq Establishments prior to operation and licensing.
16) All plumbing must meet the requirements of the City of Tigard and the Oregon
Uniform Plumbing Code.
171 All employees must have current Washington County Fcod Handler's Cards.
18) A plan review fee and license fee with an applecation must be submitted.
19) A preliminary ins,3ection must be conducted prior to operation or licensing.
