On the XLT series of impinger ovens the heat source is located in an isolated heat exchanger
area Due to this isolation impinger style conveyor ovens do not fall under the same fire
suppression requirements as commercial cooking devices that do expose products to direct
flame. -
Through out the history of XLT oven usage. there has not been a reported case of a fire
originating in the cook zone, or for that matter setting product on fire. In general the XLT
conveyer oven is used for baking pizza products. It has been our experience that these ovens
are treated as baking appliances and require only a type II type hoods.
Under the NFPA 96 these ovens should be considered bakery type ovens. On rare occasions
fire protection has been required and the "installing fire protection companies have had
difficulty finding the ovens in the manufactures installations manuals This is because these
ovens are not listed. because they rarely are required to have fire protection on the appliance.
It is very common for, these types of chain conveyor ovens to be confused with the chain
broilers (open flame) that Burger King and others use. The XLT oven may look similar yet is
..completely different in operation and application. •
•
The XLT series of conveyor ovens have the heat source located in an isolated heat exchange
area. Due to this isolation our ovens should not fall under the same fire suppression
requirements as commercial cooking devices that do expose products to direct heat sources.
This chamber is constructed of 100% stainless steel and extremely unlikely to have a
potential for a fire. This chambers main purpose is to contain the flame from the burner and
exchange the flame to heat for baking. . •
Please consider the XLT baking ovens to be non - grease producing.and very unlikely to start a
fire. In our history of providing these ovens to the food service industry we have no records of
any fires.

Peter Goodman

General Description
Halton's P- 2 hood is designed exclusively for Little Caesar's to provide optimal capture performance
when used with the BOFI XLT 3270 oven models. The hood is designed to hang directly above the
pizza oven which provides an operational advantage of capturing the grease, smoke and other effluents
directly above the pizza oven outlets. By localizing the capture area the hood can efficiently capture
and effectively eliminate convective heat spillage to the store.
System Capabilities
The hood system is ETL listed in both the United States and Canada for use with the BOFI XLT -3270
oven series. The hood can be used with single, double or triple -stack configurations at the design
airflows (for both hoods) shown. The P -2 hood model includes testing and balance (TAB) ports built
into the hood, a closure panel to hide the threaded rod and connecting the hoods, and skirts
at the rear of the hoods to close the gap between the bottom of the hoods and the top of the blower
- -motor deck. - - - - - - -• - - - - -

1) Inspect the crating carefully. If there are signs of damage, call the freight carrier
before uncrating the units. Carefully uncrate the units.
** Important note **
Do not leave units out in the weather for an extended time period. The protective PVC
around the hood will become very difficult to remove if left exposed to the weather
conditions for a long period of time.
2) Position the hood near the actual installation site and carefully remove the crating
material.
3) If a two deck oven is used, weld the 11.5" X 11.5" transition onto the 14" X 14" collar.
4) Lift hood assembly into position and support from above using 1 /2" all thread rods
(supplied by others). The assembly should be located 1 /2' above top surface of
oven, making sure that hood is level and plumb. (See reference drawing)
5) Loosen bolts that hold side skirts in place, slide them down until they touch top of
oven blowers, re- tighten bolts. (See reference drawing) .
6) Make sure grease filters and grease cups are installed in place before start-up.
7) Until the unit is placed into service, protect the outer surface from being scratched
under normal job site conditions.
•
1) After installation is complete, it will be necessary to check and balance the airflows.
Use T.A.B..ports to measure exhaust airflows, (see ref.. dwg.) for corresponding T.A.B.
requirements.
2) After the system has been placed into service and the balancing of airflows has been
accomplished, a final inspection should be made. Check for unusual noises, excess
exhaust or supply rates and general operations.
1) Clean the hood canopy inside and out as needed with mild soap and water. Never
use harsh or abrasive cleaners on Stainless Steel or Painted surfaces.
. 2) Clean the filters and grease cup(s) daily, first washing by hand, and then placing them
into a dishwasher or by steam cleaning.
•
Halton Company warrants all P2 hoods for a period of 12 months from date of shipment to
be without defects in workmanship and material. Omissions or defects will be replaced or
•
repaired at Halton's option. Halton will not accept labor charges without prior approval.
Upon receipt of the Halton hood, inspect it immediately for any shipping damage and notify
carrier immediately if damage is found. Halton will not accept responsibility for any shipping
damage, but will assist with getting a claim filed if needed.
There are no instructions contained within this manual for installation or maintenance of fan
packages. See appropriate manufacturer's manual for detailed instructions.
It is the responsibility of the installing contractor to see that the system installation is
completed in accordance with the project plans and specifications and that it meets all specific
requirements of local code officials. The local authority having jurisdiction could overrule
some of the installation details written in this manual. The installation. shall be in accordance .
with NFPA -96. All electrical systems shall be installed following local and national codes.
It is very, important that the system be turned over to the owner in the best condition possible.
The owner and /or operator should be instructed in the proper operation, care and maintenance
of the system.
If questions or complications should arise during the installation of the Halton hood that cannot
be solved using the instructions, please contact Halton office at 1- 800 - 442 -5866.
Because the exhaust airflows rates were established under controlled laboratory conditions,
please see 'submittal drawings or contact the manufacturer for exhaust air flow rates.
Continuous product improvement is a Halton policy, therefore specifications
and design are subject to change without notice.
